Good Jalapeno Corn Bread
2 cups yellow cornmeal
1 cup flour
1 teaspoon salt
2 Tablespoons baking powder
2 onions, peeled and finely minced
8 jalapenos, stemmed, seeded and finely minced
2/3 cup melted butter
2 cups cream style corn
1 1/3 cups sour cream
4 eggs
2 cups cheddar cheese, grated
Preheat
oven to 350 degrees. Mix the cornmeal, flour, salt and baking powder in a bowl.
Combine the onion, peppers, butter, corn, sour cream, eggs, and cheese and mix
thoroughly. Add to dry ingredients and mix well. Grease and flour muffin tins
and fill the muffin cups halfway with the batter. Bake for 15-20 minutes, or
until golden and a toothpick inserted into the muffins comes out clean.
