Maria’s Key Lime Pie

Serves: One Pie

 

Pie:

1 (9 inch) pre-baked pie shell

¼ cup sugar

4 egg yolks

2 cups sweetened condensed milk

½ cup Key lime juice

 

Topping:

1 ½ cups heavy cream

3 TBS sugar

 

Preheat oven to 325 degrees

Pie: in a mixing bowl, combine sugar and egg yolks until sugar dissolves. Add sweetened condensed milk and Key lime juice, stirring slowly just until well-combined: do not over mix. Pour into pie shell and bake at 30 minutes just until set.

To check doneness, shake pie gently to see if it is firm. If it is not, continue to bake in 5 minute increments until it is done.

Cool completely in refrigerator before topping.

Topping: Beat cream with sugar until soft. Top pie with whipped cream.
