Strawberry Margarita Sorbet
(Serves 8)
1 cup sugar
2 cups hot water
2 pints fresh or frozen, thawed strawberries
6 to 8 TBS fresh lime juice
6 tbs tequila
1/4 cup Triple Sec
Sliced fresh fruit as a garnish
Mint sprigs
Dissolve sugar in hot water. Let cool. Puree 2 pints
berries in blender. Mix in 6 tbs lime juice, tequila and Triple Sec. Stir syrup
into berry mixture. Taste and add more lime juice if desired. Refrigerate until
well chilled. Process strawberry mixture in ice cream maker according to
manufacturer's instructions. Freeze in covered container several hours to
mellow flavors. If frozen solid, soften in refrigerator. Place scoops of sorbet
in center of plates. Surround with fruits. Garnish with mint.
