Grilled Pork Tenderloin in Green Sauce
Serves: 4
3 Tablespoon sesame seeds
1 Tablespoon pumpkin (pepitas), or sunflower seeds
2 medium garlic cloves
3/4 cup packed fresh cilantro leaves
3/4 cup chopped green onion (green part only)
1/3 cup chopped tomatillos
1 1/2 6-inch corn tortillas, torn and soaked in water to soften
Salt and pepper
4 5-oz pork tenderloins, trimmed of fat and membrane
1/2 cup chicken stock
Chopped green onion
Cook 3 Tablespoon sesame seeds and 1 Tablespoon pumpkin
seeds in heavy small skillet over medium-high heat until dry and golden,
stirring frequently, about 3 minutes. Transfer to processor. Add garlic and
chop finely. Add cilantro leaves, green onion, tomatillos and tortillas and
blend until smooth. Season sauce generously with salt and pepper. Transfer
sauce to heavy large saucepan. Prepare barbecue on high heat. Pat pork dry.
Season with salt and pepper. Grill until cooked throughout, about 15 minutes. Meanwhile,
heat sauce, adding enough chicken stock to thin to desired consistency. Slice
pork thinly. Spread sauce on plate. Top with pork. Garnish with green onions.
