Mediterranean Lamb Skewers
Serves: 6

 

1/2 cup olive oil
1/2 cup red wine vinegar
2 large garlic cloves, minced
1 teaspoon dried basil, crumbled
Salt and freshly ground pepper
5 lbs. boneless leg of lamb, trimmed and cut into 1 1/2-inch cubes
Spicy Pepper Sauce*

Combine first 4 ingredients in large bowl. Season with salt and pepper. Pierce meat with fork. Add to marinade. Cover and refrigerate 2 days, stirring occasionally. Prepare grill or broiler. Drain meat and thread on skewers. Grill to desired doneness, turning once, about 10 minutes for medium. Serve immediately, passing sauce separately. Can be served with rice pilaf and cold Arab bread.
