Mediterranean Mini-Grill
Serves; 4
2 hot Italian sausages
1 tender steak such as rib or sirloin (about 8 ounces)
2 chicken breasts, boned (8 to 10 ounces total)
2/3 cup olive oil
2/3 cup lemon juice (or juice of 2 to 3 lemons)
2 1/2 teaspoon cayenne pepper
6 cloves garlic, chopped
1 green bell pepper
1 red bell pepper
1/2 red onion
12 to 16 bamboo skewers, soaked in water
salt to taste

Simmer sausages in water for 7 to 10 minutes, or until
slightly undercooked. Drain, slice 3/4 inch thick, place in bowl, and set
aside. Cut steak and chicken into 3/4 inch chunks and place each in separate
bowl. Pour one-third of the olive oil into each of the three bowls. Add lemon
juice, cayenne pepper, and garlic equally to each bowl. Cover bowls with plastic
wrap and set in refrigerator to marinate overnight. Cut vegetables into
approximately 3/4 inch chunks. Thread a piece of red pepper onto each skewer,
then follow with a piece of chicken, a chunk of onion, a slice of sausage, and
so on until all ingredients are used up. Grill or broil. Salt to taste. Serve
over rice pilaf and lemon wedges.
