Pork Souvlakia  (Greek-Kebob)

Serves: 3-4

 

1 pork tenderloin

1 yellow onion peeled

2 green peppers

4 TBS olive oil

2 TBS lemon juice

1/2 teaspoon oregano

Salt and pepper to taste

 

Cut pork into 1/2 inch cubes or larger. Cut yellow onion and green peppers into 1-inch square pieces. Marinate the meat and vegetables in the olive oil, lemon juice, soy sauce, oregano, salt, and pepper for about 2 hours. Then alternate vegetables and meat on skewers. Grill until lightly browned, about 10 to 15 minutes turning once or twice. Serve over rice or rice pilaf. The tenderloin makes the difference.
