3 lbs. meat
1/2 Tablespoon cardamom seed
1/2 Tablespoon mastic
2 teaspoon cinnamon
1/2 Tablespoon nutmeg
1/2 Tablespoon white pepper
1 teaspoon black pepper
1/2 lb. red onions
3 bay leaves
1 oz. garlic
1 pint lemon juice
1/2 pint vinegar
1/2 Tablespoon cloves
3/4 lbs. salt
Cut lamb, beef or chicken into thin round pieces about 7Ó
in diameter and 1Ó thick. Cut pieces of fat the same size and thickness as the
meat. Marinate the meat. Put marinated meat onto skewer and broil meat on one
side and trim off and eat.
Spit the leg of meat or place the slices (with fat) on the grill. Cook well and
serve with Hummus on pita (Arabic) bread and hot sauce.
