Sliced Beef with Broccoli
1/2 lb beef tenderloin
1 teaspoon sugar
1/2 Tablespoon soy sauce
1/2 teaspoon baking soda
2 teaspoon cornstarch
1 Tablespoon cold water
1 Tablespoon oil
1 lb broccoli
15 pieces scallions (1/2 inches long)
15 pieces ginger (1/2 inches long)
Sauce
1/2 Tablespoon soy sauce
2 Tablespoon oyster sauce
1/2 Tablespoon wine
1 teaspoon sugar
1/2 teaspoon cornstarch
2 TBS oil
Slice beef across the grain into 1 inch square slices. Place in a bowl. Add the
sugar, baking soda, cornstarch and cold water. Mix well. Then add 1 TBS of oil
and marinate for half an hour at minimum. In a large bowl, mix the soy sauce,
oyster sauce, wine, sugar, and cornstarch. Cut the broccoli into 1 inch short
pieces. Remove the stems. Heat the oil in a frying pan about 300 degrees. Stir
fry the beef for about 10 minutes until it is done. Remove the beef and drain
the oil from the pan.
Heat another 3 TBS of oil in the same pan to fry the scallions and ginger for a
few minutes. Add the broccoli. Stir fry. After 3 minutes, add the beef and
seasoning sauce. Stir quickly over high heat until mixed.
