Souvlaki (Shish Kabobs)


Leg of lamb, pork or beef; boned, cut in 1-inch squares
1cup olive oil
Juice of 3 lemons
1/2 cup white wine
Sald and pepper
Oregano
1 to 2 cloves of garlic, crushed
1 to 2 bay leaves

Cut meat into chunks. Combine olive oil, lemon juice and wine. Pour marinade over meat. Sprinkle with salt and pepper, oregano and garlic. Add 1 to 2 bay leaves. Cover and refrigerate overnight. When ready to cook, skewer meat. Cook skewers over charcoal (or in oven broiler), basting and turning occasionally for about 15 minutes.
