Spaghetti with Meat Sauce
4 Tablespoon olive oil
1 onion, chopped
1 carrot, whole
3 cloves garlic, minced (fresh)
2-28 ounce cans. Tomato sauce
6 ounces. can tomato paste
1 teaspoon black pepper
1 teaspoon sugar
3 tbs parsley, chopped (fresh)
1 teaspoon basil
1/2 teaspoon oregano
1 teaspoon thyme
1 lb lean ground beef
11/2 lbs. Italian sausage, hot
Brown sausage in a 4 quart pot. Remove and drain. Brown ground beef in same pot
over medium-high heat; drain off excess fat. In same 4 quart pot, heat oil and
lightly brown onion and garlic. Stir in tomato sauce, paste and spices except
thyme. Simmer gently for 30 minutes. Add meat, sausage, thyme and whole carrot
to tomato sauce. Simmer 1 1/2 hour stirring occasionally.
