Stuffed Shells

1 package large shells
1 15 oz. container ricotta cheese
2 eggs
1 cup shredded mozzarella cheese
2 Tablespoons parsley
1 teaspoon pepper
1/4 cup grated parmesan cheese
red sauce with hot Italian sausage
1 cup shredded mozzarella cheese

Boil shells according to directions. Mix ricotta, eggs, mozzarella cheese, parsley, pepper and parmesan cheese. Spread bottom of 15Ó x 10Ó baking pan with tomato sauce. Drain shells in colander and add large spoon of sauce to prevent shells from sticking together. Fill shells with ricotta mixture and place in baking pan. Top with generous amount of sauce, crumbled sausage and mozzarella cheese. Bake at 350 degrees for about 45 minutes.
