Broiled Skewered Marinated Chicken
Serves: 6
1 1/2 lb boneless chicken, cut
into 1-inch cubes
18-24 bamboo skewers
Marinade:
3 large cloves garlic, minced
1/4 cup onions, finely chopped
1/4 cup lime or lemon juice
1 TBS fresh ginger root, minced
1 1/2 TBS ground coriander
1/2 tsp ground cumin
1/2 -1 tsp black pepper
Cayenne pepper, to taste
1/2 cup plain low-fat yogurt
1 tsp soy sauce, mixed with 1 tsp brown sugar
Soak bamboo skewers in water for one hour. Mix the
marinade ingredients together and coat chicken pieces on all sides. Marinate
for at least 30 minutes. Thread the chicken pieces on the skewers and grill or
broil 3 or 4 inches from the heat, turning skewers until chicken is crisp and
brown, about 5 minutes. Baste with marinade as needed. Serve with peanut sauce.
