Chicken Muenster
Serves: 6
2 to 3 pounds boned, skinned chicken
breasts, cut into 1 to 2 inch cubes
4 eggs, beaten
Unflavored bread crumbs for dredging
1 pound butter
1 medium onion, diced
2 cups mushrooms, sliced
8 oz Muenster cheese slices
1 cup chicken bouillon
Soak chicken in beaten eggs for at least 1 hour. Dip
chicken in bread crumbs, brown in butter and drain on paper towels. Sauté
onions and mushrooms in same pan. Place chicken in an un-greased casserole on
baking dish and sprinkle with mushrooms and onions. Place cheese over top. Pour
bouillon over all. Bake, covered, at 350 degrees for 20 minutes. Uncover and
bake an additional 10 minutes.
