Fried Noodles, Singapore Style
Serves: 6

1 lb wheat noodles
2 TBS oil
1/2 cup onions, thinly sliced
3 large cloves garlic, finely minced
1/2 lb chicken or pork cut into bite size pieces
1 cup bean sprouts
1 1/2 tsp hoisin sauce
1/2 tsp sugar
1/4 cup water
1 TBS black pepper
Garnishes:
6 scallions, finely minced
2 red chili peppers, seeded and cut into thin matchstick strips
Fresh cilantro leaves, coarsely chopped

Prepare garnishes and set aside. Cook noodles according to directions. Drain. In a wok, heat oil and fry onions and garlic until soft. Add chicken or pork and stir-fry 3 minutes. Stir in hoisin sauce, sugar, and water and boil 1 minute. Mix in bean sprouts and cook for 30 seconds, stirring constantly. Add noodles, and stir and toss gently, until well mixed and heated through. Serve hot with garnishes arranged on top.
