Roasted Chicken, Greek Style
Serves: 4

1 3 pounds chicken
1/2 cup olive oil
Juice of 2 lemons
1 Tablespoon oregano
salt and freshly ground black pepper, to taste

Marinate the chicken for 1 hour in a mixture of the remaining ingredients, being sure to rub
some inside the chicken. Bake at 374 for 1 hour or to taste. If you wish to do this on a
barbecue, it is best to cut the bird in half the long way and then marinate. Cook to your
liking over medium-hot coals.
