Nance’s Buffalo Chicken Wings
Hot sauce
1/2 cup butter or margarine
1 1/2 teaspoon brown sugar
1 teaspoon fresh lemon juice
1/4 teaspoon minced garlic
3 Tablespoons Franks red hot cayenne pepper sauce, or to taste
3 pounds chicken wings, cut apart at joints
3 cups vegetable oil, if frying
Melt butter in small skillet over medium heat. Stir in
brown sugar, lemon juice, garlic and hot sauce. Remove from heat
. After frying the wings in hot oil until golden brown and very well
done, remove from oil with slotted spoon and drain on paper towels. Keep hot.
To serve, reheat hot sauce, add chicken wings a few at a time. Turn gently to
coat and heat one to two minutes. Transfer to a hot serving platter: serve with
Marie's blue cheese dressing and celery sticks. NOTE: If baking, bake at 375 to
400 F. Cover baking pan with vegetable oil. Add wings turning over once to coat
with oil. Bake 45 minutes or until crispy golden brown.
