Satay Daging (Chicken and Meat BBQ with Peanut Sauce)
Serves: 6
6 boned chicken breasts, cut in
3/4 inch cubes
1 pound rump side lamb, cut in 3/4 inch cubes (optional)
3 Tablespoons soy sauce
1 teaspoon ground garlic (or powder)
1 teaspoon lime juice
3 Tablespoons vegetable oil
20 to 25 bamboo skewers
Sauce
1 cup roasted peanuts
1/4 cup chopped shallot
1 teaspoon garlic powder
1 Tablespoon chopped red chili powder
1/2 cup soy sauce
Pinch of sugar
Salt to taste
Marinate chicken and lamb in mixture of soy sauce, garlic,
lime juice and vegetable oil at least 1 hour. Put 5-6 meat cubes on each
skewer. Grill over charcoal, turning skewer at times until meat is done.
Combine all sauce ingredients and serve in dish next to hot
skewers.
