Smothered Chicken
Serves: 4

1/4 cup olive oil
1 chicken cut up
salt
black pepper
1 large onion, chopped
1/4 cup all-purpose flour
2 cups chicken stock
1 lb mushrooms, sliced
1/4 cup heavy cream
2 TBS chopped parsley

Heat oil in a skillet over moderate heat. Add chicken pieces, sprinkle with salt and pepper and cook for about 5 minutes, until lightly browned. Turn, sprinkle again with the salt and pepper and brown the other side for about 5 minutes. Remove chicken and set aside. Add the onion to the same skillet and cook gently for 5 minutes. Add the flour and cook, stirring, for 2 minutes. Whisk in the stock and bring to a boil and season with salt and pepper. Simmer for 2 minutes, then return the chicken to the pan. Cover and cook over low heat for 10 minutes. Add the mushrooms and simmer, covered for 10 minutes. Stir in the cream and parsley and serve.
