Horiatiki Salata (Peasant Salad)
2 medium tomatoes, cut into wedges
1 cucumber, peeled, halved lengthwise and cut into 1/2 inch slices
2 medium green peppers cut into strips
2 medium yellow onions, sliced
12 Greek black olives
1/4 pound feta cheese, crumbled
3 tablespoons capers
1/2 cup olive oil
1/4 cup wine vinegar
1/2 teaspoon dried oregano
1 clove garlic, crushed, optional
1/2 teaspoon salt
Freshly ground black pepper
Clean and wash all vegetables. Place tomato and cucumber
slices on a large platter and top with green peppers, onions and olives.
Sprinkle on cheese and capers. Combine olive oil, wine vinegar, oregano,
garlic, salt and pepper in a bowl and beat well with a fork or put in a screw
jar, seal and shake well. Beat or shake again just before serving.
