Spinach, Mushroom and Red Onion Salad
Serves: 6
Dressing
1/2 cup vegetable oil
3 TBS garlic vinegar or white wine vinegar
1 1/2 TBS dry white wine
1 1/2 TBS soy sauce
1 small garlic clove, minced
3/4 tsp. dry mustard
1/2 tsp. sugar
1/2 tsp. (scant) curry powder
Salt and freshly ground pepper
Salad
2 bunches spinach, stemmed, torn, into bite-size pieces
8 oz mushrooms, sliced
6 bacon slices, cooked and crumbled
3 hard-cooked eggs, finely chopped (optional)
1 red onion, thinly sliced, separated into rings
For dressing:
Whisk all ingredients
in small bowl.
For salad:
Combine all ingredients.
Whisk dressing to blend. Add to salad and toss to coat.
