Tomato and Bean Vinaigrette

1 large ripe tomato
1/4 cup extra virgin olive oil
1 shallot, finely chopped
1 tablespoon sugar
1/2 cup cooked black beans, drained
4 sprigs cilantro, chopped
1/4 cup white vinegar
1 hot pepper, chopped (optional)
Combine tomato, shallot and beans. Set aside.

In a small bowl, stir together remaining ingredients. Pour over tomato mixture. Cover and marinate for at least one hour before serving.
