Authentic Salsa Cruda
2 large tomatoes, seeded and
chopped
1 jalapeno chili, diced
1 medium white onion, chopped
2 tablespoons chopped fresh
cilantro
2 green onions (scallions), chopped
2 teaspoons fresh lime juice
1/2 teaspoon salt
Combine all ingredients in a small bowl, stirring well.
Serve immediately at room temperature or store up to 2 days in the
refrigerator. Makes about 2 cups. Excellent
over grilled or broiled salmon.
