Cilantro Pumpkin Seed Butter
Makes 1 1/4 cups
1/2 cup toasted, salted pumpkin seeds (about 2 ounces)
1/3 cup cilantro leaves
3 large garlic cloves
3/4 cup butter, room temperature
Freshly ground pepper
Mince first three ingredients in processor. Add butter and
blend until smooth. Season with pepper. Divide among 3
small ramekins, what ever the hell they are; smooth tops. Serve at room
temperature.
