Habanero Hot Sauce
16 Habanero's sliced in half
1/2 Cup Onion chopped
2 cloves garlic minced
1 tbs. vegetable oil
1/2 cup carrots chopped
1/2 cup distilled vinegar
1/4 cup lime juice
1/4 tsp. Mustard powder
1 tsp. Salt
1/8 tsp. Tyme
Sauté the onion, garlic in oil until soft. Add salt,
mustard powder, tyme, carrots and Habanero's with a small amount of water.
Bring to a boil, reduce heat and simmer until carrots are soft and liquid is
reduced, about 15 minutes. Place the mixture in a food processor and puree
mixture until smooth. Combine the puree with vinegar and lime juice and simmer
5 minutes to combine flavors. Strain mixture if desired into serialized bottles
and seal. Ready in two weeks.
