Hummus Bi Tahini
3 tbs. Tahini
Juice of 2-3 lemons
1 medium clove garlic (optional)
1/2 tsp. salt
1/4 cup juice from canned garbanzo (chick peas) beans
1 - 12oz can garbanzo beans, drained (reserve liquid)
Put beans, Tahini, garlic, salt and lemon juice into blender. Blend about 15 seconds to make
almost smooth. Next, start to add reserved liquid from garbanzo beans
until desired consistency. Continue to blend for three minutes until a smooth
consistency is achieved. To serve, spread hummus on plate or bowl and cover with 3
tablespoons
olive oil (if desired). Next, sprinkle 3 lines of paprika like spokes of a
wheel over the hummus. Serve at room temperature with small pieces of pita or
flat bread for
dipping.
