Mr. Dave’s Smoky Turkey Soup
Serves: 8


1 Turkey carcass
1 large onion, coarsely chopped
1 large carrot, chopped
1 garlic clove, crushed
1 bay leaf
1 sprig parsley
dash of smoking liquid
8 ounces Great Northern beans
2 Tablespoons raw rice
1 large onion, finely chopped
2 celery stalks, finely chopped
1 carrot, finely chopped
2 Tablespoons olive oil
8 ounces Italian plum tomatoes, chopped
Turkey meat, shredded or diced
1/2 teaspoon ground black pepper
1 teaspoon basil or parsley
1/2 teaspoon chili powder
1/2 teaspoon marjoram
dash of Tabasco

 
Put carcass, onion, carrot, garlic, bay leaf, and parsley in pot. Cover with cold water and simmer 2 hours. This will yield 10 cups of stock.
Meanwhile, cover beans with water and boil 2 minutes. Turn off heat for one hour and then simmer until tender. In large pot, sauté with oil, the onion for 8 minutes. Add the celery, carrot, tomatoes, and the broth and simmer 20 minutes. Add the raw rice and continue to simmer for an additional 15 minutes. Add the reserved beans and turkey. Return to a simmer for a moment; Add salt and pepper to taste.
