Maria’s Lentil Soup
 
1 bag lentils (rinsed)
1 large onion (chopped)
3 stalks celery (chopped)
3 carrots (chopped)
1 can chicken broth
1 pkg frozen chopped spinach
1 small can tomato sauce
2-3 Tablespoons grated Parmesan cheese
salt and pepper
Crushed red pepper (to taste)

Place lentils in large saucepan and add chicken broth and water to cover. Add onion, celery, carrots, tomato sauce, salt and pepper. Cook approximately 1-1/2 hours. Taste during cooking to see if more salt is necessary. Add frozen spinach and cook until separated, stirring occasionally. Serve in bowl and top with chopped hot cherry peppers (or sliced jalapeno peppers) and shredded mozzarella cheese (or Parmesan cheese).
