Shrimp Stock
Makes 2 cups
3 1/2 cups water
1/4 cup dry white wine
6 ounces shrimp shells
1/2 medium leek, chopped
1 small celery stalk, chopped
1/2 small carrot, chopped
1/2 small onion, chopped
1/2 bay leaf
Combine all ingredients in a large saucepan and bring to a
boil. Reduce heat and simmer 35 minutes. Strain stock. Return to saucepan and
boil until reduced to 2 cups if necessary.
