White Bean Soup

 

1 lb Navy beans

1 Ham hock

6 cups water

1/2 cup chopped onion

1/2 cup chopped green pepper or carrots

1/2 cup chopped celery

1 tbs. minced fresh parsley

1/2 tbs. minced garlic

1/2 tsp. salt

1/4 tsp. pepper

1/8 tsp. cayenne

1/8 tsp. crushed red pepper

1/4 tsp. tyme

1 whole bay leaf crushed

1/4 tsp. basil

 

Pre soak beans according to directions on package. In a large pot place beans, Ham hock, and water. Bring to a boil. Reduce heat to simmer and add all remaining ingredients. Simmer for 1 to 1 1/2 hours. Pull bone out and trim meat off the bone. Cut meat into bite size pieces and add back to soup. Salt to taste and serve.
