Artichoke White Bean and Roasted
Garlic Salsa
Serves:

1 head garlic
Juice of 1 lemon
1/4 cup extra-virgin olive oil
1 can artichoke hearts, drained and diced
1/4 cup diced roasted red
peppers
1 (14-oz) can white beans,
rinsed and drained
1/4 cup onion, diced
3 tablespoons chopped parsley
Salt & pepper to taste
Wrap
the garlic heads in aluminum foil and bake in a 350 degree oven for 1 hour. When
garlic is cool enough to handle, separate cloves and squeeze the roasted garlic
into a
bowl. Whisk in the lemon juice, and then the oil in a steady stream. Add artichoke
hearts, peppers, beans, onion and parsley. Season to taste and serve with baked
pita triangles.
