Maria’s Pickled Beets

Serves: side dish
 
2 cans beets (drained)

½ tsp Oregano

olive Oil

red wine vinegar

½ medium onion, sliced thin

Salt and pepper to taste

 

Sprinkle beets with sugar, salt, pepper and oregano. Add olive oil and red wine vinegar to cover beets. Add thinly sliced onion and shake well. Place in container for several days before serving.
