Garlic Peppers and Mushrooms
1/3 cup olive oil
2 large red bell peppers, cut into 1/4 inch-wide strips
2 large green bell peppers, cut into 1/4 inch-wide strips
2 large yellow bell peppers, cut into 1/4 inch-wide strips
1 1/4 pounds mushrooms, thickly sliced
8 garlic cloves, sliced
2 1/2 tsp. salt
1 tsp. pepper
1/2 cup finely chopped fresh parsley, preferably Italian
Heat oil in large skillet over medium heat. Add bell peppers, mushrooms,
garlic, and salt. Cover and cook until vegetables are just tender, stirring
occasionally, about 8 minutes. Increase heat to high. Uncover and cook until
almost no liquid remains in pan, stirring frequently, about 8 minutes. Add
pepper. Mix parsley and serve. It's great on hot dogs or with grilled Italian
sausage.
