Green Beans with Paprika

Serves 3-4


2 tsp. mild paprika (or 1 tsp. each mild and hot paprika)
4 tbs. margarine
1 medium onion, finely chopped
1 lbs... fresh green beans, cut diagonally into 1-1/2 inch slices
2/3 cup water
1/2 tsp. salt
1/2 cup low fat sour cream
1 Tbs. flour

Heat the margarine in a large saucepan and sauté the onion until golden. Sprinkle paprika over the onion and stir to mix well. Add the green beans and stir until all the pieces are coated with paprika. Stir in the water and salt. Bring the liquid to a boil over high heat, reduce the heat to low, cover tightly, and simmer for 20 to 30 minutes, until the beans are tender. In a small bowl, whisk together the sour cream and flour until the mixture is smooth. Stir the sour cream into the beans and simmer, uncovered, 5 minutes longer. Serve as an accompaniment to roasted meats.
