Maria’s Black Bean Cakes

2 cups dry black beans cooked
1 1/2 tbs. Oil
1 garlic clove minced
1/4 tsp. Oregano
1/4 tsp. Rosemary
1/4 tsp. Thyme
2 cups mushrooms
2 tsp. Salt
1 tsp. Pepper
3 eggs
1/4 cup flour
1 cup Jalapeño bread crumbs

Sauté' oil, garlic, oregano, rosemary, thyme and mushrooms until the mushrooms are soft. Add salt and pepper. Remove from stove. Combine all ingredients in a mixing bowl. Add eggs, flour and breadcrumbs and mix. After mixing form into patties (8-10 cakes). Pan sear on medium heat until done or deep fry.
