Mexican Rice
1 cup white rice
2 cups chicken broth or stock
1/2 white onion, chopped fine
1 jalapeno, chopped fine
1/2 cup tomato sauce
1 tbs. olive oil
1 tsp. chopped garlic
Heat oil in saucepan. Add rice, onion, garlic, and
jalapeno. Sauté until rice becomes slightly browned. Add tomato sauce and stir.
Add broth, cover and lower heat. Cook 15 to 20 minutes. Serve hot.
