Rice Pilaf

Serves: 6


1 tbs. corn oil
1 1/2 cups long grain brown rice
1 medium onion, thinly sliced
2 tbs. soy sauce
1 tbs. fresh thyme, finely chopped, or 1 tsp. dried thyme, crushed
2 cups chicken stock

Preheat oven to 400 degrees. Heat the oil in a heavy skillet. Add the rice and the onion slices and cook, stirring frequently, until brown. Add the soy sauce and thyme to the chicken stock in a small saucepan and bring to a boil. Put the rice mixture in a baking dish or casserole and add the hot stock. Stir, and then cover tightly. Place in the oven for 40 minutes. Remove and allow standing for 10 minutes more before removing the cover.
