Spanish Rice
Serves: 6
1 onion, chopped
4 stalks celery, chopped
1 large green bell pepper, chopped
2 cloves garlic, minced
1 tbs. oil
1 tsp. chili powder
1 tsp. cumin, ground
1 cup chopped tomatoes
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper
3 cups cooked brown rice, still warm
Sauté the onion, celery, pepper
and garlic in oil.
Add chili powder and cumin. When fragrant, add tomatoes, salt, oregano and
pepper. When tomatoes are cooked through, stir in the rice.
