Spinach Balls
2 packages frozen chopped spinach
2 cups Pepperidge Farms stuffing mix (in the bag)
1 onion, diced
4 eggs
1/2 cup Parmesan cheese, grated
3/4 cup melted butter
1 tsp. thyme
1 garlic clove, minced
Salt and Pepper to taste
Cook and drain spinach. Squeeze out excess water. Mix all
remaining ingredients together. Marinate two hours. Shape or roll into balls.
Place on a cookie sheet and bake in 300-degree oven for 30 minutes. Serve at
once.
